I have almost finished reading The China Study and apart from one mention on a chart about avoiding cooking with oil, I can't find any other information about it. Why does Dr Campbell say we should minimise our cooking with oil, such as olive oil?

If we are eating a healthy diet we don't need to add oil even in cooking, Dr John McDougall says: "The fat you eat is the fat you wear". Dr McDougall is a colleague of Dr Campbells.
Any fats we need we can get from our plant based foods, even lettuce has a tiny amount of fat in it...lol
For dishes that I would normally have used oil or fats I used a vegetable broth and saute them slowly instead of frying. Even in salad dressings that would usually have oil in them I add vegetable broth for extra flavour and no oils, to thicken the dressings I add a little arrowroot mixed with water.
